Basque gateau

Basque gateau (etxeko biskotxa or pastiza in the province of Labourd) is a typical cake from the province of Labourd in the Basque Country. It was originally made with black cherries or with pastry cream.

Cheese

Several farmers make their own cheese in Sare: using sheep’s or cow’s milk, or a mixture of both.

They are available for sale at the village market every Friday fron April to September from 16:30 - 20:30

You can also purchase them directly from producers:

Honey, fresh pollen, propolis, medicinal plants, etc.

Sare is also inhabited by colonies of bees.

Cider & apple juice

The Ihitia farm produces its own cider, apple juice and vinegar made from farmhouse cider!

Peppers

The most well known is, of course, the Espelette pepper, a spicy pepper from the Basque Country.

Sare is not part of the AOC producing area, but several market gardeners from the village sell Biper Eztia, or sweet peppers, which are becoming more popular.
